Due to insufficient funds in my bank account this week, I arrived home last night hungry and determined to make myself dinner with anything I had lying around the house. I had a small amount of Ezekiel pasta, some white wine in the fridge that was about to go bad, and some capers that were crying out to be used in something.
I took out these ingredients and decided that they should join forces with the tomato, lemon and garlic that were also lying around my kitchen. I topped it all off with the sprinkle of parmesan cheese I had left over and it turned out to be the perfect quick, cheap, healthy meal. Here’s how it all came together….
1/3 box of Ezekiel Pasta
1 tomato – chopped
2 cloves of garlic – chopped
2 tbs capers
1 lemon
1/4 cup dry white wine
1/4 cup vegetable broth
1 tbs olive oilIn a small pot, bring water to boil and and pour in Ezekiel pasta – cook for 4 to 5 minutes. While pasta is cooking, in a medium pan, sauté garlic and tomatoes. Add vegetable broth, white wine, lemon and capers and sauté for a minute or two. Strain pasta and pour into pan and stir everything together. Let sit for a minute, pour into bowl and sprinkle with parmesan.
