After a weekend of some heavy vendor food at Lollapalooza, I was in need of something fresh for dinner last night, so I decided to make my fail-proof favorite salad. This is is one of my favorite, simple meals and is inspired by the salad that my mom always made with dinner growing up.
Since a veggie-filled salad does not really equal a full meal to me, I like to add some grilled chicken which leaves me feeling satisfied and adds a bit of protein. This is so fresh and simple to make.
1/2 head of chopped romaine lettuce
3 cherry tomatoes
1/4 can of hearts of palm
1 piece of grilled chicken sliced
1 clove of fresh shopped garlic
2 tbs extra virgin olive oil
Juice of 1 lemon
sprinkle of salt and pepper
Simply combine all ingredients in a bowl and stir together. I like to toss everything in a close-able container and shake it up to really mix it all together well.
