Red Quinoa With Liquid Aminos & Scallions

The first time I made quinoa, I wasn’t quite sure what to do with it but my instincts led me to what is now my staple way of preparing it when I’m looking for a quick meal. Not only is this easy to make and delicious, it is packed with healthy amino acids and protein.Quinoa is a great source of both protein and amino acids.
Combine this with the amino-acid rich Braggs Liquid Aminos soy sauce replacement that I use and you get a meal rich in health benefits. Amino acids help the immune system, digestive system, metabolism and glucose balance just to name a few. You can read more about the necessity of amino acids here. Both quinoa and Braggs Liquid Aminos are also non-GMO. For this recipe, I like to use Inca Red Quinoa which I find has a little bit more natural flavor than traditional quinoa. Here is how I make this dish…

1 box of Inca Red Quinoa (about 2 cups)
2 cups of organic vegetable broth
2 cups of water
2 scallions chopped
Juice of 1/2 a lemon
Drizzle of Braggs Liquid Aminos to taste (While this is lower in sodium than soy sauce, it still has natural salt in it so add in slowly until desired flavor)

In a medium pot, add quinoa, vegetable broth and water. Cover and bring to boil. Once boiling, reduce to simmer and let sit (stirring occasionally) until liquid is absorbed. Remove from heat and mix in remaining ingredients.
