Quinoa Flake & Almond Butter Cookies

I’ve been craving sweets all week and thankfully have succeeded in resisting the vending machine at work.  Last night I decided to nip this sweet tooth in the bud and bake some cookies.
I had recently purchased some quinoa flakes to use for a breakfast cereal and thought these might be nice to use in a cookie recipe.  After some internet searching, and finding a few different recipes, I decided to make up my own.  Since I had such success with the almond butter brownies, I thought almond butter would be a great base for these.  To make things a little more interesting, I love adding tea to my desserts these days so I tossed in some Rooibos Chai tea and some dark chocolate chips and these guys came out pretty delicious! Tasty, flourless, simple and healthy…could you ask for more wrapped up into one cookie?

Ingredients:
1/2 cup almond butter
1 cup quinoa flakes
1 1/2 tsp xanthum gum
1/4 cup agave
1/4 tsp baking soda
1/2 cup dark chocolate chips
1 teabag rooibos chai tea

Mix all ingredients together in medium bowl. Pre-heat oven to 350 degrees. Form dough into small cookies and place on non-stick baking sheet and bake for about 15 minutes. Let cool before eating. This makes about 10 cookies.

    Very interesting recipe… I love each of those ingredients individually, but never thought to put the together in a cookie. I’ll have to try this a t some point (but right now there are already too many cookies in the house!)

    These sound delicious! Can I make this without xan­thum gum? I don’t have it readily available and try to avoid corn since I have an intolerance. Thanks!
