When I got home today, my downstairs neighbors were playing Christmas music and this of course got me into the winter spirit. Last winter I discovered one of my favorite quick, warm meals – Red Fork Spanish Red Pepper soup.
A warm bowl of soup was calling my name, so I ran out and picked some up and curled up on the couch with a big bowl of it. This soup is fantastic on it’s own but what I like to do to play off of the flavors and make it a bit more filling is toss in some pieces of avocado, top with some greek yogurt and toast up some Ezekiel tortilla chips to dip into it. Red Fork uses all fresh, natural ingredients and they’re a can free company. You can watch a great video about their products here. They have quite a few soup flavors but this tomato soup meets Mexican tortilla soup is my favorite!
