Strolling though the new natural market just over the bridge from my house, I came across Ezekiel burger buns! This meant veggie burgers were definitely on the menu for dinner.
Luckily, they also had my favorite kind of veggie burgers, Sunshine Burgers. I not only love these because of the flavor, but also because the only ingredients are brown rice, veggies, herbs, ground raw sun-flower seeds and sea salt -no soy and no fake meat. They are delicious! To spruce them up even more and add a little color to this meal, I added some extra sharp organic cheddar cheese, sliced avocado, roasted red peppers hummus and some lemon juice. First, I toasted the buns, heated up the veggie burger and roasted the red pepper slices. I spread the hummus on one side of the bun, piled piled all of the toppings on, tossed it in the oven for a minute to melt the cheese and squeezed the lemon on. This veggie and grain packed meal has so much delicious flavor, it really satisfies every craving.
