Avocado & Greek Yogurt Dip

On Sunday, my roommate and I hosted an Oscar party at our apartment which excited me not only because it was an opportunity to get dressed up, but because it was a great excuse for me to try out some new recipes for my friends. I’m a sucker for some good guacamole, and a fiend for Greek yogurt in any recipe, so when it came time to make some party dips, I decided I would try a little something different and combine the two.

All this involved was making my favorite, super basic but flavorful guacamole recipe, and mixing in some Greek yogurt – easy as pie (or easier)! The result was delicious, light and smooth- a nice departure from the chunky kind.  As I often do, I toasted up some Ezekiel tortillas and made some chips for dipping. The dip was gone by the end of the night and from the look on James Franco’s face, he was wishing he was in our living room enjoying the good company and tasty treats. Here’s how to make it…

2 ripe avocados
1/3 cup Greek yogurt
Juice of 1 lime
1/2 medium red onion chopped
Adobo and garlic pepper or salt and pepper to taste

Peel avocados and discard seed. In a medium bowl, mash the avocado. Add Greek yogurt and lime and mash again until smooth. Stir in onion, lime and Adobo (or salt and pepper) to taste. I also added a sprinkle of garlic pepper. Serve with chips or sliced veggies.

    I found this on tastespotting.com. A very natural pairing of two great ingredients that leaves me wondering why I didn’t think of it (besides the obvious answer that I’ve never had an original idea in my life).

    Ironically, Spanish folks don’t eat much Mexican food; probably because they generally don’t like spicy stuff. I have introduced my friends to a lot of Mexican dishes and this will go over very well, I’m sure.
