Mini Zucchini & Potato Pizzas

What party is complete without finger food? I knew I wanted to serve something creative for our Oscar party that we hosted last week and I had remembered a recipe for mini zucchini pizzas that I once come across on skinnytaste.com. I had always wanted to try this, and this was a perfect occasion. In addition to the zucchini, I decided to do some little potato pizzas as well.

I love the idea of this recipe as a fantastic healthy alternative to heavy, doughy pizzas and they were a huge hit among my movie and healthy food loving friends. This is also super simple to make, but you do have to move quick when broiling them so they don’t burn. I used regular extra virgin olive oil in a bottle to coat the zucchini and potatoes instead of spray olive oil. Just pour a little in a bowl and use a spoon to rub the oil on them. 4 slices large zucchini 1/4″ thick (or 1 medium zucchini cut on diagnal)
Spray olive oil (I used regular bottled olive oil)
2 tbsp pizza sauce
1/4 cup part skim mozzarella
salt and pepper

Cut zucchini (and potatoes) about 1/4 inch thick. Coat both side lightly with oil and season with salt and pepper. Broil or grill for about 2 minute on each side. Top with sauce and cheese and broil for an additional minute or two. (Careful not to burn cheese)

    What a great idea. Love the fact that I can have something “fun” but at the sametime its healthier then a regular dough pizza
